Kickass Chimichurri !!!!

Ok, so lately I have been addicted to Vegan cookbooks and busy trying out every recipe in the book and adjusting it according to my taste buds and preferences.

I was at the local library last week and had ordered Chloe Coscarelli's Vegan cook books, As soon as I got them, I jotted down all the recipes I wanted to try, if you follow me on Instagram @mrsparijain, you probably know about my obsession with Chef Chloe!

I had made Cranberry barley bliss recipe from her cookbook and my family loved it back to back for two days, once as a baked casserole with cashew cream sauce and second has a filling in a burrito with some authentic chimichurri sauce! 
The sauce turned out soooo good that I had to put it up on my blog!! It's a MUST HAVE staple in my house for that spicy kick to just about anything! 

You all know I post easy peasy recipes that could be whipped in minutes, coz that's exactly my style of cooking on busy weekdays.



Ingredients required for ChimiChurri Sauce

  • Freshly chopped Parsley
  • Fresh chopped Cilantro
  • 4 minced cloves of Garlic
  • 1 cap full of white vinegar
  • Red pepper flakes according to preference or whole jalapeño peppers chopped
  • 1 shallot
  • Dried Italian seasoning mix about 1-2 tbsp
  • Small cup of water
  • Black pepper
  • Sea salt
  • 1/2 cup olive oil/avocado oil.

Just add everything to the blender &...... voilaaaa, the most amazing spread ever!! Whooop!! 
Easy Peasy! Told ya!

While everyone is watching( like 1 billion people worldwide!! Yeah!) INDIA-Pakistan cricket match, I am heading to a relaxing foaming Epsom salt bubble bath that is waiting for me!!

Comforting Golden Elixir !!!!!!

Golden Elixir!

Heyyyy!! It's Fridayy!!

Actually, I wanted to add more exclamation marks because that's how I am feeling right now!

You know when it rains and you can hear the droplets while you have spa music in the background and warm milk with condiments on the stove that is making the home smell aromatic!

Well, just taking a quick moment out of my rainy day to share a super simple all vegan ofcourse 'Golden Elixir' !

Ingridients required:-

  • Almond milk, homemade or store bought.
  • Freshly ground turmeric powder
  • Cinnamon
  • Ginger powder
  • Nutmeg powder
  • Local organic honey or organic maple syrup
  • 2-3 cloves
  • 1/2 tsp of coconut oil

Everything is to be brought to a boil and simmered for a while in a saucepan!

Just looking at all the spices and flavors come together is therapeutic to me!

Pour it in to favorite mug and cherish the fact that you have made time for yourself and your body totally deserves all the love & nourishment!!

"Dessert for Breakfast" Smoothie!!

Greetings folks!
Lately, I have been feeling super energized as a result of doing the things I truly enjoy,writing in my journal each weeknight,going out for lunches and hikes with girlfriends,volunteering at a local shelter & taking yoga classes! Ahh.... stretching feels soo good!! Love my yoga mat! 
I am really starting to feel authentic and take immense pride in my lifestyle! If you're following on my [email protected] where I share all my moments of my day!

Food definitely has a hugee role to play, So, I am sharing this easy peasy smoothie recipe rich in antioxidants,vitamins,minerals and beta carotenes! Plus it tastes like DESSERT! You've got nothing to lose! Hifii!!
Ingredients required:
  • Canned organic pumpkin puree
  • Shredded carrots 
  • coconut yogurt (Non-vegans can substitute greek yogurt..Read protein)
  • Pumpkin pie spice, or clove and nutmeg powder.
  • Half cup almond milk or milk of your choice.
  • 2 Dates
  • small cup of raspberries.


Blend everything together and there you have it! Beta carotene (So good for your peepers) loaded dessert smoothie is ready to relish!!

Delightful Sweet Potato &Arugula Hummus!

Today was an exceptionally productive day! I got a LOT done, considering it's pouring non-stop (Cali needs some! Thank the heavens!) but ALL I really want to do is hide under that plush blanket I got the other day from Costco! Speaking of Costco, I took a while  for me to master the maze like aisles and find all the amazing goodies they have on their shelves, Like this amazing high tech globe I found for my 6 yr old son! And the Cuisinart programmable cooker, I am debating between the Instant pot on amazon and Cuisinart for my kitchen, Let me know if you own any of them! I also bought a dozen of seasonal sweet potatoes to make some recipes for the winter and get over the occasional winter blah...one step at a time!(Winter blah ..errr..beauty..post next up!)

I am always up for modifying and taking all my previous amateur recipe trials by experimenting with seasonal vegetables! This time it was sweet potatoes or yam however you would like to call it! It's fairly easy and ohh so delicious! You will never want to have the store bought version again! I promise you!

Recipe:-
  • 2 Sweet potato peeled,cooked,cut and mashed.
  • Tahini or add roasted sesame seeds by grinding them.
  • 1 cup Garbanzo beans or chickpeas,Soaked and cooked.( I do not like using canned beans usually)
  • 1/2 a cup of Arugula
  • 1/2 a cup of coriander/cilantro.
  • 1 lime or 1/2 a lemon
  • Olive oil (3tsps)
  • Sea salt and Black pepper (Malabar variety from Costco! )
  • some water for desired consistency. 
Adjust the quantity depending upon the number of people you are serving.
Blend all of the above, My  beloved Ninja blender made sure it's just perrrrfect! You can choose to add       cayenne pepper, I totally forgot, so make sure to add a lil pinch & it will definitely make things a lil spicier!

This variation of hummus is one of my favorite versions and I hope you will give it a thumbs up too!

Next up should be my winter beauty must have's! 

I am obsessing over so many amazing products and I can't wait to share it with you allll!!!

Vegan Carrot Cream Soup

So, I have so many vegan recipes to share that I been experimenting lately,(check out my IG @Glamlocal to see what I am upto lately!),Finally on this cozy night, I am sitting down to 
to write this blogpost! 
As the winter arrives and temperature starts to cool,I can only think of warm and comforting things to cook and soothe my soul and body.
So,today I am sharing my Vegan Carrot Cream Soup rich in vitamins which requires minimal ingredients.
  • Organic carrots.
  • Garlic
  • Ginger
  • onion
  • coconut milk or cream
  • Vegetable broth

For this recipe, prepping a day before would save you time.
  • Peel the carrots if they are not organic or else just wash and slice them lengthwise and chop them.
  • Boil the carrots, blend them in a blender with some vegetable broth and keep aside 
  • Chop garlic and onions and shred ginger.
  • Add some oil in the saucepan and when its heated,add the garlic followed by onions, and when they are cooked midway, add the carrot puree
  • Let it simmer for 20minutes. Add seasonings (salt & pepper) according taste.
  • Now its time to add some light coconut milk cream and stir the soup while adding the broth as needed while its simmering, It has  a beautiful aroma that will warm up your home.
Once its fully incorporated into the soup,transfer to a bowl and garnish with basil leaves, chopped or whole. I plucked some from my herb garden that I am starting to develop a liking for lately.

I am all about simple & wholesome vegan cooking. Could be enjoyed with a slice of toasted bread or  make it a bread bowl.

Delish Vegan Banana Split.

Okie Dokie, So here's my much requested VEGAN banana split that I make all the time as a savory breakfast or snack, So finally thank you to my friends for pushing me to post this recipe. You will need
  • bananas
  • coyo (coconut yogurt) or Vegan Ice cream 
  • vegan chocolate sauce(Recipe Below)
  • pumpkin seeds
  • cranberry
  • Granola
  • Pomegranate seeds
  • Chia seeds

Simply split your banana into 2 halves, layer the ice cream, pour the chocolate sauce & garnish with rest of the ingredients over it especially the pomegranate seeds add such an amazing taste to the entire dish.
For Vegan chocolate sauce
  • soak cashews & dates in water to soften them.
  • once they are softened, blend them with coconut milk,vanilla extract,maple syrup and sprinkle himalayan pink salt. Adjust consistency accordingly. 
  • Voila! you're done!

My to go Green smoothie !

Hey Beautiful peeps!!

My weekdays are so hectic with school and home chores that I dnt find enough time to squeeze in some blogging time! But today is Sunday morning and I wanted to share my green smoothie recipe with all of you.


If you want to live a life with heightened consciousness and exceptional well being 7 days a week, 365 days a year ! You've got to include this as a part of your lifestyle!!

Green smoothie requirements:
  • Half stalk of organic celery
  • 1 banana
  • Half a piece of ginger
  • 1 ripe organic avacado
  • 1organic apple or pear
  • I cup of organic kale
  • 3 medjool dates
  • I full glass of coconut water preferably
  • Or you can use water

Blend Blend Blend!! 
Voila!

It keeps you full, you can carry it with you if you are in a hurry all the time like my husband! Lol
  • Celery is rich in potassium and vitamin K and multitude of other things and helps bring blood pressure levels down
  • Kale is the richest source of Vit A and helps build strong bones and joints. 
  • Ginger has anti inflammatory properties.
  • Avacado is rich in mono saturated fats, and omega fatty acids, bringing that shine and glow to ur face !

All in all I urge you to try this smoothie and experience it's benefits for a lifetime.

Goji Berries

Hey Guys!

So here's my first post, I am really excited to share an amazing super fruit that I have been including in my diet for a couple months now,
TADAAAAA... Goji Berries! Yes these are amazing antioxidant rich little chewy resin like berries which have more Vitamin C than Pomegranates and Oranges combined! Almost at 250%  of Vit C per serving, They are raw, vegan excellent for those who are diet specific. 
Dating back in history, it was grown in the Himalayas and used by Chinese practitioners in various medicines. Monks from Tibet believed that it is associated with longevity of life.

Also it is interesting to note that apart from its incredible nutritional value it is also has highest ratings on ORAC scale (Oxygen Radical Absorbance Capacity) which measures their antioxidant activity .

They belong to the botanical family of Solanaceae (which Btw I learnt in High school as I am science Grad and botany was one of my main subjects).


So all said and done I urge to try these, I have been popping these as I battle stuffy nose and cold like symptoms right this minute. I also love to sprinkle them over greek yogurt and along with other berries and chia seeds. My Son as become a lover of Goji berries like me!  
You can find them at health food stores, I bought mine online at Soap.com. It's best to buy in bulk as the cost comes down.  Hoping you guys are going to  try it and let me know if you did!
